Count me in! I have some Libby's in the cupboard right now. The sign at Target indicated a pumpkin shortage and I didn't want to run out before Thanksgiving! Shocked I still have pie, cookies and more bread to make. Oh I know--I made really good pumpkin profiteroles one year. I must go find the recipe!

I love the Libby's Pure Pumpkin. One of the things I enjoy is the ability to adjust the seasonings of a recipe to my taste. Here is one of my favorite ways to use it. This is also a low fat way of get the flavor of pumpkin
during the holidays or anytime.


Pumpkin Muffins

1 pkg. yellow cake mix
1 15-ounce can Libby's pure pumpkin
1 teaspoon cinnamon
1/2 teaspoon nutmeg

Combine all ingredients. Scoop into muffin cups about 2/3 full. Bake at 350 degrees until toothpick inserted comes out clean. Yum! Makes about 24 muffins.

Awesome! I can't wait to see what everyone comes up with. I think doing narrow focused recipe contests are fun - let's us dive in deeper and compare apples to apples.

My pumpkin spice chocolate chip cupcakes with pumpkin mousse frosting were made with Libby's Pumpkin Puree and they were a hit! The pumpkin taste was natural and delicious! Everyone at the party I brought them to raved. I wouldn't have chosen a different product before I entered this contest, and I still won't choose anything different!

Does it have to be an original recipe? I have 2 great recipes that I will be using....one is for a Pumpkin Mousse Roll and the other is for Pumpkin Cheesecake. I might do something with a pumpkin pie bread recipe that I recently played with...light....pumpkin pie bread french toast. but I didn't "make up" any of the recipes. does it count?

Well, anything you can do to make the recipe your own??? Smile I say original cause we don't want members taking from fellow bloggers - think about the recipe. Add a change... make it your own!

Also, if you've already uploaded a recipe to bakespace that fits this giveaway, you can use that too! Just make sure the photo is yours. Smile
