My Pumpkin Biscotti Recipe:

And since my customers rave about each year... I think its fabulous!
I also think the pumpkin puree by libby's is smooth enough just to infuse the cookie with flavor without leaving any lumps in the biscotti batter. Gives me the mild pumpkin flavor I want, without tasting like pumpkin pie mix. Totally reminds me of what Fall should taste like.

Oooh I love pumpkin! A co-worker just passed along her fantastic cookie recipe, which I plan to modify to make it gluten free for my recently-diagnosed celiac sweetie.
Or maybe I'll make my famous pumpkin waffles! Or my favorite, moist and delicious pumpkin muffins. I haven't made GF modifications on those yet, as we are less than a year into our GF adventure...
