Today I forgot to defrost the chicken, so my Bami/noodles were made with eggs.

Yum! I haven't made Bahmi Goreng in a long time, but it is a favorite. How do you make yours, Fan?

Vicki, I have a simple short version based on the Chinese way of making stir fried noodles.
I simply cook the noodles. Use my wok and fry the eggs first, then take them out and leave only two tablespoons of oil behind. Then I stir fry my veggies like carrots, leeks, bean, sprouts or whatever I can find. Then I add the spices like garlic, ginger, salt, chili and five spices powder. Add a small dash of stock or water and have that cooked away. Then I add the noodles and eggs, toss it thoroughly and if necessary a dash of salted soy sauce. The luxury version also has ham or chicken stir fried with the veggies and is served with krupuk and peanut satay sauce _________________ Fanmajie

Fan - I'm copying your version. I have this week's menu pretty much set, but usually have most of those ingredients on hand. Hope to make it in the next couple weeks. Do you use Chinese noodles?

Vicki, I do. Not the egg noodles, but the plain noodles. _________________ Fanmajie
