I have a feeling I am going to have an abundance of corn this summer and not enough time to eat it all. How do you prepare it for freezing, on and off the cob. I don't think I want to try the canning method.......we do have a vacuum sealer, so I think that might help.

Karen I blanch the corn on the cob and chill it then cut the corn off the cob and freeze it. or my mother in law cuts heres of the cob and brings it to a boil and adds butter to it then chills it and freezes it . I like my way better. _________________ Carolyn

Karen, we husk and take all the silk that we can off the corn. Then we boil it for about 3 minutes, let it cool a little then cut it off the cob being sure to scrape the cob with the knife to get the "milk". I put it in a one of those vacuum sealer bags and put it in the freezer to freeze before I use the vacumm sealer because you don't want to loose any of that good "milk." We always save a big bag to serve at Thanksgiving and everyone loves it. _________________ Patti
