Why I want to be mentor in this category: I would like to share my nutrition knowledge (B.S. in Nutrition from Cornell University) and real-world experience to help others.
What inspires me in this category: Eating healthy (even with dietary restrictions) is the best way, along with exercise, to stay healthy and young looking.
Experience: I am a nutritionist with a son who has a severe dairy allergy. As a result, I have over a decade of experience working with his allergy and preparing foods my whole family enjoys. A good example of creative recipe development is this modified baked ziti recipe @ http://www.ambroliofoods.com/baked-ziti-fresh-mozzarella/
Biggest Lesson Learned: 1) Although milk is a good source of calcium, it's not a necessary part of a healthful diet. Many other foods provide excellent sources of calcium. 2) Many packaged foods contain dairy products, especially whey and casein. 3) Yogurt and hard cheeses may be tolerated even by those who are allergic to milk or lactose.
Books, classes, teachers that have helped me: My undergraduate degree in nutrition, a current awareness of food science and new food products, food trade shows, and my own dairy free recipe development provide the inputs to my knowledge base.
Education, Awards, Pro Experience: Nutrition degree from Cornell University, 5 years of food service management experience for a range of diet types, and decades of meal preparation experience and recipe development.
We can achieve optimal health by eating well and exercising.
