My Cheesecake Corner
Why I want to be mentor in this category:
Because I love to share the secrets of baking with other who love to bake.
Experience:
I have a degree in the Pastry Arts, graduated Summa Cum Laude. I own my own baking business, and my most popular item is my cheesecake.
Biggest Lesson Learned:
Always let the cream cheese come to room temperature. Always scrape the sides of the bowl after adding each egg. Always bake in a water bath, even if the recipe does not direct you to do so.

My Tips:
- Always let the ingredients come to room temperature.
- Always scrape the bowl.
- Always bake in a water bath.

Baking cookies is my favorite thing to do.
Experience:
I have been baking cookies since I could reach the counter.
Biggest Lesson Learned:
Creaming the butter and sugar takes a minimum of 5 minutes.

My Tips:
- Cream the butter until it turns white. Makes fluffier cookies.
- After adding the flour, mix ONLY until you can no longer see the flour. Otherwise you get tough cookies.
- Never store different varieties of cookies together.

Because anybody can make a great cake without using a mix.

Have been baking cakes out of my house since 2004

Cakes are easier to cut when very cold

- Always soak cake in simple syrup before icing. Keeps cake moist.

Why I want to be mentor in this category:
Cupcakes aren't just for kids anymore!
What inspires me in this category:
I love to come up with different "themes" for cupcakes based on holidays, events, etc.
Experience:
Cupcakes are a fun alternative to full cakes.
Biggest Lesson Learned:
If you're going to use gumpaste flowers on top, make them a week ahead of time.

- You can use any cake recipe to make cupcakes. The cooking time will be shorter.
- The easiest way to apply icing is with a piping bag.
- You can get creative with toppings using different candies.
