I've been baking sourdough bread for over 30 years.
Biggest Lesson Learned:
Sourdough is like a pet, it needs to be feed regularly and it's home needs to be kept clean!

I think every serious bread baker should have a copy of Peter Reinhart's Bread Baker's Apprentice.

I come from the Hard Knocks Baking School. I didn't have a mentor and learned the hard way!
- I'm a purest when it comes to Sourdough Starters and would NEVER use commercial yeast!
