Experience:
28 years of baking gingerbread houses.
Biggest Lesson Learned:
Cook gingerbread well. (dark is better than too light-need to cook out some of the moisture)
My Tips:
- Don't try to assemble any parts of the house on a rainy or very humid day. The icing (mortar) won't harden-it will collapse.
- Let gingerbread harden for a day or two--loosely covered by allowing the air to dry it.
- Assemble sides, let harden completely before putting on roof.Can be done same day, if mortar is dry. Let roof dry before adding chimney.
- Once done decorating, spread any leftover icing over the cardboard--looks like snow.
