Why I want to be mentor in this category:
Because I think baking in general is fun but it would be rewarding to help someone achieve the "perfect loaf"!
What inspires me in this category:
I would really like to mentor in more categories but I love bread. It's the staff of life and what all cultures have in common. Whether it's a beautiful crusty loaf or an unleavened flat bread....it's wonderful.
Experience:
I was a baker and pastry chef apprentice for several years. I had my own baked goods business.
Biggest Lesson Learned:
That you have to have patience when it comes to baking! Especially sourdough, poolish or bigas.

Books by Bernard Clayton, Peter Reinhart, Edward Espe Brown, Joe Ortiz, Jeffrey Hamelman, Bo Friberg, Beth Hensperger and Rose Levy Berenbaum.
Education, Awards, Pro Experience:
Apprenticed as a pastry chef and worked as a baker for 4 years. Own my own baked goods business for 3 years and attended culinary school and worked boh for 7 years.

- Make sure your yeasts and starters are active.
