What inspires me in this category: I love the controversy that BBQ creates. Pork vs. Beef, Dry rub vs. Sauce, Charcoal vs. Gas, North Carolina vs. well...enough said.
Experience: I have been cooking whole-hog, North Carolina BBQ for 13 years.
Biggest Lesson Learned: Every cut of the hog is different and requires different attention during the cooking process. If you cook the hog as one peice of meat, youre really just cooking to the lowest common denominator.
Books, classes, teachers that have helped me: Lots of trial and error, many Carolina "pig-pickings," and alot of friends willing to try my creations.
