My Low Calorie Corner

Why I want to be mentor in this category:
As a person who has struggled with being overweight my whole life, I feel like the success I've had with weight loss and a healthy lifestyle over the last few years can help others.

What inspires me in this category:
Fresh, clean food makes you look good but most importantly, it makes you feel good.

Experience:
About 4 years back, I decided I needed a lifestyle change. I focused on portion control, lean proteins, good fats & carbs and have maintained a 60+ lb. weight loss due to my (now automatic) healthy habits.

Biggest Lesson Learned:
Healthy food can be extremely tasty, filling, and make you feel great. A lot of people don't eat poorly so much as they eat too much in general. Portion control is a huge factor in nutrition. Everything in moderation.

Books, classes, teachers that have helped me:
Reading nutrition labels is the biggest thing. Also, learning about eating clean (and using Body for Life as a bit of a resource) has helped tremendously.

Education, Awards, Pro Experience:
I have a "light" tag on my blog with lots of great, healthy recipes: http://ellysaysopa.vox.com

My Tips:

  • Don't buy into the "don't eat after 7:00" rule. As long as you are within your calories for the day, it's fine. In fact, it's encouraged so you aren't going 12 hours without food, which is not good for you.
  • Eat the right portion. Yes, the first time you eat 2 or 3 oz. of pasta, you may feel like it's a kiddie portion. But bulk it up with a lean protein like chicken or shrimp, veggies and a light sauce and you'll be surprised at how much it fills you up.
  • Carbs are not the devil! Focus on good, complex carbs - whole wheat breads and pastas, barley, quinoa, brown rice, oats, fruits.

My Greek Corner

Why I want to be mentor in this category:
I love the cuisine and think it's nice to have an "authentic" source for international food.

What inspires me in this category:
It's hard to get authentic Greek recipes because most Greeks don't measure! It took me a while to actively do this so I have some recipes to pass on to my friends and family.

Experience:
I'm 100% Greek (first generation in the States) and I grew up eating almost nothing but Greek food!

Biggest Lesson Learned:
Greek food is typically pretty healthy but a lot of people tend to be a little heavy handed with things like oil. I've learned how to make the cuisine just as tasty with even less guilt.

Education, Awards, Pro Experience:
I have a lot of Greek food on my blog, though it's not limited just to Greek - http://ellysaysopa.vox.com

My Tips:

  • The Mediterranean Diet is one of the healthiest - it focuses on lots of veggies, proteins, and good fats like olive oil.
