GOODNESSBAKER'S MENTOR PROFILE
Hi, I'm goodnessbaker.
I'm a mentor in Vegan
My Vegan Corner
Why I want to be mentor in this category:
Vegan baking is very simple and satisfying. It is fun and healthy to bake using minimal ingredients.
What inspires me in this category:
To not use animal byproducts is healthier for you, the environment and animals. Egg and dairy allergies are quite common so Vegan baking is best for social situations.
Experience:
The Goodness Bakeshop is known for vegan and allergy sensitive baking.
Biggest Lesson Learned:
Vegan baking is best by omitting egg and dairy from favorite traditional recipes and focusing on technique.
Books, classes, teachers that have helped me:
Vegan Cupcakes (Cookies) Take Over The World - Isa ChandrarnMartha Stewart's baking series. rnHarold McGee and Shirley O Corriher books on food science and chemistry.
Education, Awards, Pro Experience:
Master pastry chef course at Stratford Chef's School. rnWorking on Goodness Bakeshop cookbook to be published this year.rnRegular contributor to Roger's Daytime program food segments.
My Tips:
- When a recipe has less than 2 eggs, replace each egg with 2 tbsp of liquid.
- Cow's milk can be equally replaced by using almond, rice, oatmeal, soy milks, juice or water.
