Why I want to be mentor in this category: With the economy the way it is, and with most households having both parents working, poultry is a great meat for less money and can be cooked quickly. Since I fall under both categories, I hope that my experience can benefit someone else.
What inspires me in this category: Poultry is such a huge part of my daily cooking, why not share what I know with others?
Experience: Between my allergy of fish, one child not liking pork, beef being so expensive, I have been forced so to speak to cook with chicken 9 times out of 10. I've learned over the past 20 + years to come up with all sorts of ways to cook chicken.
Biggest Lesson Learned: Don't turn your nose up on a recipe just because of one or two ingredients that you don't have or don't like. You can always change it up and make it your own, just the way you like it.
Books, classes, teachers that have helped me: I have several cookbooks (some just on chicken), my mom, and 2 grandmothers who are all incredible cooks and a wealth of information.
Besides buying in bulk and saving a few bucks, it's always nice to have some cooked chicken on hand (in the freezer) for those quick week night meals. I try and keep 2 cups worth since most recipes call for that amount.
