JULES_CAKEMONSTER'S MENTOR PROFILE
My Cake Corner
Why I want to be mentor in this category:
One of the best things about my job is teaching people. Knowing that I can take some of the mystery out of decorating is very satisfying. I am happy to help because decorating should be an enjoyable experience, not a nerve-racking one.
What inspires me in this category:
To be able to create something out of simple ingredients and see the smiles it brings inspires me. I am inspired by other decorators & always looking to improve my skills.
Experience:
23 years as a professional decorator. 10 years as a decorating instructor. 14 years in chocolate. 5 years as cake & gingerbread judge at L.A. Fair. Blur ribbon winner at L.A. fair for wedding cake & gingerbread house.
Biggest Lesson Learned:
Be the boss of your cake! It can (almost) always be fixed. Or covered.
Books, classes, teachers that have helped me:
I love Debbie Brown's books. Straight forward & so cute! I also look to Margaret Braun- incredible detail on her cakes. I learned by watching others and listening to what they have to say.
Education, Awards, Pro Experience:
1987-1995 Head decorator for Cinderella Cakes, Costa Mesa, Ca.; 1996-present Head decorator & kitchen manager for Calico Cake Shop, Buena Park, Ca.; CalJava Intl. School of sugr art 2005; 2005-present judge at L.A. fair in culinary styled dpt. wedding cakes & gingerbread houses; 2009 Best of Buena Park cake decorating
My Tips:
- Follow your instincts & don't be afraid.
- Look for inspiration everywhere- colors, shapes, textures.....
