My Cheesecake Corner

Why I want to be mentor in this category:
I'd like to help someone who needs help, as I did, when cheesecake became a priority for me.


What inspires me in this category:
Amazement at what some cream cheese can become using the right techniques and recipes.


Experience:
I have become the "go to" person at our local YMCA to make cheesecakes for special occasions.rnMy experience spans (so far) 15 years of baking these luscious cakes.rnThere is more to cheesecake than plain or chocolate chip.


Biggest Lesson Learned:
Never pick up a springform pan without having one hand supporting the pan bottom.. results can be disatrous otherwise.


Books, classes, teachers that have helped me:
At the start I relied on magazine recipes (Woman's Day, Good Housekeeping, Bon Apetit) and now I mostly rely on internet resources.


Education, Awards, Pro Experience:
No training... just love. I am self-taught.

My Tips:

  • Lining your springform with foil prior to baking your cake makes it possible to actually give a cake without worrying about the bottom of your pan never coming back to you.
  • Cheesecakes usually crack due to 1) the oven being too hot or 2) baking the cake longer than is required.
