Why I want to be mentor in this category:
I like discovering new flavors and meeting people who just as passionate as cooking as me.

I can eat anything that has a "kick" to it and I love discovering new spices that tastes great and are extremely hot! I love traveling to places and exploring how various cultures translate what's hot and how hot.

Biggest Lesson Learned:
Hot in different languages means different things.. just like hot to one person means something completely different to another.

My Tips:

  • When trying something on the menu listed as hot, keep in mind the country you're in. As for a small bite first and then dive in.
  • To measure spices: Work over a sheet of parchment paper or waxed paper, fill the measuring spoon, mounding excess spice over the spoon. With a flat spatula, sweep the excess onto the paper below. Add the measured spice to the mixing bowl.
  • continued from above: then fold the paper in half and slide the excess spice back into the bottle.
  • When doubling a recipe increase the amount of spices by 1 1/2. Give the dish a taste and add more if necessary.
