Why I want to be mentor in this category: Because most of the food out there reccomended for diabetics shoots my blood sugar sky high! So it's important to me to share with other type 1's what worked for me.
Experience: I'm a type 1 diabetic foodie. My goal is to keep my A1C at 6 or below and my meals tasty enough that non diabetics ask for the recipe.
Biggest Lesson Learned: It's not about sugar free! It's about carbohydrate count + glycemic index. I've also found that most recipes reccomended for type 2's and diabetics don't work for me.
Education, Awards, Pro Experience: Numerous carbohydrate counting classes, nutrition classes, and a lot of years of blancing food and diabetes.
If you have an unstable period of day such as breakfast. Develop a menu of options based on your blood sugar ranges. For example if I'm over 120 I go zero carb for breakfast. If I'm under 100 I might have a fruit morning.
