Why I want to be mentor in this category: The general public is so uneducated about diabetes and I want people to know that this has become an epidemic in our society. I can help change that by doing my part.
What inspires me in this category: Obviously this is near and dear to my heart. I don't want to see anyone suffer with this chronic disease, but by showing that eating can be fun, it will make it a bit easier for the newly diagnosed or anyone who is a caregiver.
Experience: I have been a Type I diabetic for 25 years. I'm a personal chef (7 years) who specializes in special diets. My own doctor refers patients to me.
Biggest Lesson Learned: I've learned that the best way to control blood sugars, is to eat smaller more frequent meals. Limit salt and don't let yourself dehydrate with high blood sugar.
Books, classes, teachers that have helped me: My doctors, nutritionists, CDE, and my own experience have helped me master this topic. I can't see anyone more qualified than me.
Education, Awards, Pro Experience: I have been on the board of the CT Juvenile Research Foundation. I AM a diabetic and have been for 25 years. I currently volunteer for the New England Organ Bank, I am a mentor chef for the Personal Chefs Network.
Keep carbohydrates to no more than 35 grams per meal.
