Lesson Learned: be prepared, time management is one of the most important things in the cake business for me!
Tip: Use a timer as a guide in baking. Each batch of cake, cupcakes etc. is different!

Tip: Butter burns easily, melting in the microwave can save a lot of heartache.

Why I want to be mentor: Because anybody can make a great cake without using a mix.
Lesson Learned: Cakes are easier to cut when very cold
Tip: Always soak cake in simple syrup before icing. Keeps cake moist.

Lesson Learned: You will never know more about baking than someone else. Keep your eyes and ears open to pick up tips.
Tip: Know what flavors/ingredients compliment each other, substitutions can be fatal to the outcome.

Lesson Learned: Experiment and learn from your mistakes. Multi-task and get sleep and take your time or else you\'ll forget baking soda / salt or other ingredients. This happens when I work crazy hours!
Tip: look at magazines, books at the library, online for ideas
