Tip: Most cheesecakes love a bain-marie!

Lesson Learned: Always let the cream cheese come to room temperature. Always scrape the sides of the bowl after adding each egg. Always bake in a water bath, even if the recipe does not direct you to do so.
Tip: Always scrape the bowl.
Why I want to be mentor: I\'d like to help someone who needs help, as I did, when cheesecake became a priority for me.
Lesson Learned: Never pick up a springform pan without having one hand supporting the pan bottom.. results can be disatrous otherwise.
Tip: Lining your springform with foil prior to baking your cake makes it possible to actually give a cake without worrying about the bottom of your pan never coming back to you.
Why I want to be mentor: Because many people fear cheesecake making and there is no reason to be.

Lesson Learned: Water bath is essential to keep cheesecakes moist. You don't need a ton of ingredients. Always start with the basics then add flavoring.
Tip: Water bath is a must.
