Lesson Learned: Moisture in the oven is my friend!!! ALways, ALWAYS use a water bath...
Tip: Don't be afraid to experiment. Double wrapped pans in a water bath will prevent many problems for you.

Lesson Learned: Each ingredient is important in a recipe, like a actor in a play.....they all have a part.
Tip: Never over bake your desserts.

Why I want to be mentor: I have developed my own, or have used over 60 recipes and would like to help a new baker.
Lesson Learned: Never shock a cheesecake by abrupt temperature change or it will crack.
Tip: Most cheesecakes love a bain-marie!

Why I want to be mentor: Because I love to share the secrets of baking with other who love to bake.
Lesson Learned: Always let the cream cheese come to room temperature. Always scrape the sides of the bowl after adding each egg. Always bake in a water bath, even if the recipe does not direct you to do so.
Tip: Always bake in a water bath.

Why I want to be mentor: I\'d like to help someone who needs help, as I did, when cheesecake became a priority for me.
Lesson Learned: Never pick up a springform pan without having one hand supporting the pan bottom.. results can be disatrous otherwise.
Tip: Cheesecakes usually crack due to 1) the oven being too hot or 2) baking the cake longer than is required.

Why I want to be mentor: A lot of people are intimidated by cheesecakes and they are not hard at all.
Lesson Learned: Water bath is essential to keep cheesecakes moist. You don't need a ton of ingredients. Always start with the basics then add flavoring.
Tip: Water bath is a must.
