Interests: I cook large quanity (300-1000) on a daily basis. we usually serve 2 main entre's and a sandwich item. Been cooking since I could walk, bussing tables at 14, working at a bakery at 15 (2 am - 7am then off to school) at italian rest., fine dining, head chef at a hospice for 3 years and the rest where I am now a 1000 bed teaching hospital cooking for staff. I am in the process pf writong a cookbook for regu;ar cooks no strange ing. and using cheaper cuts. I hope I will help someone out there or they mahelp me.
