I just want to say thanks for the detailed fondant info, here and on your blog. I've been decorating cakes for a couple years but have been afraid to do fondant. I'm on my first try and I just wondered if it's too soft if it doesn't hold a ball shape when I'm leaving it overnight. It flattened out a bit. I can see it's not firm enough to make decorations, but what about just covering the cake? It seems like every time I added more sugar then it just got too dry...

Thank you! I use your marshmallow fondant recipe all the time and the chocolate fondant too! The taste is sooo much better than store bought.

ddpie, I cannot brag enough on that fire helmet cake that you made for husband. If the rest of these people on this site have not yet seen pictures of it, you should post a link. Absolutely the most breathtaking thing that I have ever seen before in my life. You are amazingly talented.
