Chicken Pad Thai
I'll admit it: I am a Pad Thai addict. Unlike the Seattle area where I grew up, there are not very many Thai restaurants out here near Boston so I get to make my own. Luckily, it isn't very difficult. In a Thai restaurant, this recipe would probably be 1 1/2 stars on the spicy scale. If you prefer more kick, add more chili powder or try adding some curry paste just be careful with the curry paste a little goes a long way!
