Apple Pikelets (Gluten-Free)

These apple pikelets are great any time of day. My mum would often make them for my sister and I when we came home from school which was a real treat. To make this recipe dairy-free, replace the butter with dairy-free spread or cooking oil. The milk can be replaced with lactose-free milk, non-dairy milk such as soy, almond or rice milk, or even apple juice in this instance. Note: If you are using a non-dairy milk or apple juice, add half the milk replacement and then add the rest slowly to ensure your batter is not too runny.
