Layered Caribbean Chicken Salad

This was a Pillsbury Bake Off Winner in 2004 (runner up) By: Barbara Jansky We cooked the chicken on the grill for this recipe. When I had made the dressing I tasted it and wasn't sure about it but decided to go ahead and use it since that is what the recipe called for, it was great, so very different. We loved it and I just had to share so others could try it.I also doubled the dressing because it looked like it wouldn't be enough, it was a good call. Servings 6 (1 1/2 cups each)
