Lemon Olive Oil Cake
This recipe came from the 'One Girl Cookies' Cookbook. I was inspired to search for a terrific olive oil cake recipe after attending an olive oil tasting this week. The cake I had at this dinner, wasn't like any olive oil cake I have ever had before. It was light AND rich, and olive oil wove everything together elegantly. Pleased to report that this recipe did not disappoint. My only change was in the baking time. I called for a total of 45 minutes, and in my oven (which runs pretty close to correct temp) was closer to thirty for perfect doneness. This cake passes the back of the fork test, and would be great with fresh fruit and a glass of Prosecco.
