Super-Moist Herbed Meatloaf

My mom always made the most wonderful meatloaf when I was growing up, so needless to say, the dish holds a certain nostalgic quality for me. Even though I live far from home now, I wanted to devise a meatloaf recipe that was delicious, and reminded me of home. This easy to make, herbacious version, is delicious, and has a unique flavor imparted from a special spice in the topping, and fresh herbs and fresh breadcrumbs in the meatloaf itself.
