Swiss Chard & Bacon Green Pizza Roll

My dad grows swiss chard, so we are always looking for interesting ways to prepare it. My mom and I came up with this version of a green pizza roll using large (mature) swiss chard leaves. Mature swiss chard can have a bitter taste. So, we parboiled the leaves in salted water prior to prepping them for the green pizza roll. To parboil swiss chard leaves: bring a large pot of salted water (approx. 1tsp of salt) to boil. Cut swiss chard leaves from stems and wash to remove any dirt. Add leaves to boiling water and boil for 3-5 minutes to soften. Drain leaves in colander under running cold water. Drain on paper towels and squeeze out as much excess water as you can. Swiss chard contains Vitamin A, B6, C, E, and K. It's also a source of thiamin, folate, zinc, riboflavin, calcium, iron, magnesium, potassium, copper, manganese, and fiber.
