Why I Love This Recipe

This simple culinary creation was a last minute throw together one evening, when ingredients at hand were limited. I have also used this same recipe using 4 Turkey Burger patties, in place of chicken.


Ingredients You'll Need

4 Boneless, skinless Chicken Breast Halves, thawed and pounded flat
Creamy Ceasar Salad Dressing- for coating
1/4c Grated Parmesan Cheese
1c Bread Crumbs (use only 1/2c if the crumbs are fine)
1/4 tsp Italian Seasoning
1/4 tsp Garlic Powder
1/4 tsp Salt
Anti-stick Cooking Spray


Directions

1) In a bowl large enough to lay chicken pieces flat, mix together Parmesan cheese, bread crumbs, Italian seasonings, garlic powder, and salt; set aside.


2) In a second bowl, pour approximately 1/2c Caesar dressing (to start).


3) Dredge both sides of the chicken through Caesar dressing to coat. Lay coated chicken onto bread crumb mixture, pressing down slightly so crumbs stick; flip and repeat. Set crusted chicken aside, and continue this process to remaining pieces of chicken, adding more Caesar dressing to the bowl as needed.


4) Cook on griddle at 250°F, or in a pan lightly coated with cooking spray. Flip meat as needed, and continue cooking until chicken is no longer pink in the center and cooked through, and bread crumbs have lightly browned.
