“AUNT MANDY’S” RHUBARB PIE

Ingredients

  • Pie Ingredients:
  • One 8” pie shell, uncooked
  • 3-1/2 C rhubarb, thin slices
  • 2 egg yolks
  • 2 C sugar
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1/2 C flour
  • Meringue Ingredients:
  • 2 egg whites
  • 4 T sugar
  • 1/4 tsp cream of tartar

Directions

  • Mix all filling ingredients.
  • Pour into uncooked 8” pie shell.
  • Bake at 400 degrees for 45-50 minutes.
  • To make meringue, whip egg whites and cream of tartar until stiff.
  • Then gradually add sugar to beaten eggs.
  • Top pie with meringue.
  • Bake another 5 minutes at 425 degrees.
