“Aunt Mandy’s” Rhubarb Pie

Serves | Prep Time | Cook Time 50-55 minutes

Ingredients

Pie Ingredients:
One 8” pie shell, uncooked
3-1/2 C rhubarb, thin slices
2 egg yolks
2 C sugar
1/2 tsp salt
1/2 tsp cinnamon
1/8 tsp nutmeg
1/2 C flour


Meringue Ingredients:
2 egg whites
4 T sugar
1/4 tsp cream of tartar


Mix all filling ingredients.


Pour into uncooked 8” pie shell.


Bake at 400 degrees for 45-50 minutes.


To make meringue, whip egg whites and cream of tartar until stiff.


Then gradually add sugar to beaten eggs.


Top pie with meringue.


Bake another 5 minutes at 425 degrees.
