ALMOND WILD RICE
4 ounces pure wild rice
1/2 cup sliced almonds
2 tablespoons chopped fresh oregano leaves
juice and grated zest of ½ orange
Place rice in pan of cold, salted water, and bring to a boil.
Cook for 10 minutes.
Turn off heat, cover and allow to steam for 20 minutes (rice will swell and curl).
Return to a simmer and cook for 10 minutes or until tender.
Just before serving, toss through the almonds, oregano, orange juice and zest.
