10 Cup Cookies
1 cup sugar
1 cup firmly packed brown sugar
1 cup shortening
1 cup peanut butter
1 cup flour
1 cup uncooked quick-cooking oats
2 t. baking soda
1 t. baking powder
1 cup chopped peanuts
1 cup flaked coconut
1 cup toffee bits
1 cup white chocolate chips
Preheat oven to 350 degrees.
Combine sugar, brown sugar, shortening and peanut butter in large mixing bowl. Beat at medium speed with an electric mixer until creamy. Add eggs, beating well.
Add flour, oats, baking soda and baking powder. Mix well. Stir in peanuts, coconut, toffee bits and white chocolate chips.
Scoop about 2 tablespoons of dough per cookie and place on parchment lined baking sheets.
Bake for 10-12 minutes. Cool on pan for 5 minutes before moving to cooling rack.
