15-minute Skillet Cassoulet

- 2 sprays cooking spray
- 1 medium onion, chopped
- 1 clove garlic, minced
- 8 oz low fat sausage, smoked, sliced 1/4 inch thick
- 1/4 t thyme
- 3/4 C chicken broth
- 30 oz canned great northern beans, rinsed and drained
- 1 1/2 T canned tomato paste
- 1/2 C dried plain breadcrumbs
DIRECTIONS
Preheat broiler
Use oven safe skilled. Coat with cooking spray and heat.
Add onion, garlic and sausage to pain and saute until onion is tender (3-4 minutes)
Add thyme, broth, beans and tomato paste
simmer 10 minutes
Sprinkle bread crumbs over beans
Place skillet under broiler until breadcrumbs are browned (1-2 minutes)
Serving ~ 1 3/4 C

I add chopped red pepper, Tabasco and red pepper flakes
