3-INGREDIENTS MUSHROOM SOUP

 

  • Cooking Time: 5 mins tops
  • Servings: 2-3
  • Preparation Time: 5 mins tops

Ingredients

  • 2 cups low-sodium broth (vegetable or chicken, whichever you prefer)
  • 1/2 lb mushrooms, preferably fresh, cleaned and sliced
  • 1-2 tbsp mascarpone
  • A knob of butter or a little olive oil

Directions

  • In a medium pan, sautée the sliced mushrooms in a little butter or olive oil, depending on your taste (I used salted butter)
  • Add the broth and mascarpone
  • Stir a bit then whiz until smooth

Notes

This is my very simplified take on Jamie Oliver's "Real Mushroom Soup" recipe. While his is absolutely amazing, as he's using wild mushrooms, this is a 10-minute variation, so to say
