5 Minute Chocolate Cake Mug

This came from one of my mom's friends from high school...I'm not sure how they got on this subject at the reunion!

INGREDIENTS

  • Cooking Time: 3
  • Servings: 2
  • Preparation Time: 5
  • 1 large coffee mug
  • 4 tablespoons flour (that's plain flour, not self rising)
  • 4 tablespoons sugar
  • 2 tablespoons baking cocoa
  • 1 egg
  • 3 tablespoons milk
  • 3 tablespoons oil
  • 3 tablespoons chocolate chips (optional)
  • a small splash of vanilla extract

DIRECTIONS

Spray Pam in the mug. Mix dry ingredients in a small bowl and mix well.


Add the egg and mix thoroughly.


Then pour in the milk and oil and mix well.


Add the chocolate chips (if using) and vanilla essence, and mix again. Pour the mixture in the mug.


Put your mug in the microwave and cook for 3 minutes at 1000watts. (The cake will rise over the top of the mug, but don't be alarmed!)


Allow to cool a little, and tip out onto a plate if desired.

Ironically, my girlfriend and I made this before getting the newsletter! Today I made it again with some modifications that for me, made it a bit richer and wheat free: 2 Tbsp oat flour + 2 Tbsp barley flour 3 Tbsp sugar (instead of four) 2 Tbsp cocoa 1 egg 3 Tbsp milk 1 Tbsp melted butter + 2 Tbsp oil (instead of 3 Tbsp oil) (I left out the chocolate chips as they all sank to the bottom) some vanilla a pinch of salt I followed the same steps though started with melting the butter in the mug... Loved it. Will do it again, perhaps with some pecans added or some chocolate shavings to see if they sink like the chips do...
