Why I Love This Recipe


Ingredients You'll Need

3/4 cup soft brown sugar
7/8 cup caster sugar
3 eggs
3/4 cup milk
2/3 cup unsalted butter
2 tbsp malted milk powder
1 1/3 cups plain flour
3 tbsp potato flour
1/4 cup cocoa powder
1 tsp baking powder
1/2 tsp baking soda
Icing and decoration:
1 1/4 cup icing sugar
1 tsp cocoa powder
3 tbsp (heaping) malted milk powder
1/2 cup soft unsalted butter
2 tbsp boiling water
Whoppers/Maltesers for decoration


Directions

Whisk together the sugars and eggs until light and frothy. Heat the milk, butter and malted milk powder in a small saucepan until the butter has melted and the mixture is hot but not boiling. Beat the milk mixture into the eggs a little at a time. Mix the dry ingredients together and sieve them into the mixture mixing carefully but thoroughly. Spoon the batter into baking cups filling them no more than 3/4 full. Bake at 325F for abotu 25 minutes (test to be sure they are done). Let cool.


Frosting: Mix together the icing sugar, cocoa and malted milk powder carefully. Add the butter and mix again. Pour the boiling water in mixing all the time until you have a smooth buttercream. Spread over the cupcakes and decorate with Whoppers/Maltesers.
