APPLE BUTTER SPICE CAKE
2 c. flour
1 tsp. baking soda
1/4 tsp. salt
1/2 tsp. mixed spices
1 tsp. cinnamon
1/2 c. butter
1 c. sugar
1 egg, unbeaten
1 c. raisins
1 1/4 c. apple butter
Apple Butter Icing
Sift flour once, measure and add salt, baking soda and spices.
Cream butter and then add sugar gradually, beating until light and fluffy.
Add eggs and beat well. Add raisins. Add flour alternately with apple butter, a little at a time. Beat until smooth after each addition.
Bake in a greased shallow pan, 11 x 8 x 2-inches.
Bake 1 hour and 10 minutes in moderate 350 degrees oven.
Spread Apple Butter Icing on cake. Cover with chopped nuts.
