APPLE MARSHMALLOW CAKE
3 cups all-purpose flour
2 cups sugar
3 tsp baking powder
1/2 tsp salt
1 1/4 cups vegetable oil
1 tsp pineapple extract
1 tsp vanilla extract
3 eggs, lightly beaten
1 cup crushed pineapple
1 cup mini-marshmallows
2 cups peeled, cored, finely chopped apples
8 oz chopped dates
3 1/2 oz can flaked coconut
1 cup chopped pecans
Preheat oven to 325*F. Grease and flour 10" tube pan.
Lightly spoon Flour into cup to measure and level off.
In a large bowl, combine flour, Sugar, baking powder and salt.
Add oil, extracts, eggs and pineapple.
Beat 3 minutes at medium speed.
Stir in remaining ingredients.
Pour into Prepared pan.
Bake at 325*F for 1 hour and 20 minutes, or until pick Inserted in center comes out clean.
Cool upright for 15 minutes on rack.
Remove from pan. If desired top with glaze made of 1 cup powdered sugar And 3-4 tablespoons apple juice.
Spread glaze over cake while still warm.
