APPLE PANCAKES WITH APPLE CIDER SAUCE
2 1/4 c. White Lily self-rising flour
2 Tbsp. sugar
1/2 tsp. cinnamon
2 well beaten egg yolks
2 c. milk
2 Tbsp. butter or margarine,melted
1 c. finely chopped pared apple
2 stiff beaten egg whites
butter or margarine
Stir together flour, sugar and cinnamon.
Combine egg yolks and milk; stir into flour mixture just until dry ingredients are moistened.
Stir in the 2 tablespoons butter or margarine and the apple.
Fold in egg whites.
Let batter stand a few minutes.
Bake on lightly greased hot griddle using 1/3 cup batter for each. (Use a spatula to spread batter evenly.)
Dot with butter or margarine.
Makes 15 pancakes.
