APPLE WALNUT DESSERT
1/4 c. unsweetened apple juice, chilled
1 pkg. (1 Tbsp.) unflavored gelatin
1 3/4 c. unsweetened apple juice
1/2 c. chopped walnuts
1/2 c. chopped apple
1/2 pt. whipping cream or
Pour chilled apple juice in small bowl; sprinkle over it
the unflavored gelatin. Mix and allow to set 2 or 3 minutes to
soften. Meanwhile, heat the remaining apple juice to a boil.
Mix together gelatin mixture and boiling apple juice; cool and
refrigerate. When mixture reaches consistency of unbeaten egg
whites, remove from refrigerator and stir in chopped walnuts
and apple. Divide into six 8 ounce custard cups and return to
chill. May sprinkle cinnamon over top.
