ARTICHOKE HORS D'OEUVRE
2 (6 oz.) jars marinated
1 small onion, finely minced
1 clove garlic, minced
1/4 c. fine dry bread crumbs
1/4 tsp. salt
1/8 tsp. each oregano, Tabasco
2 Tbsp. parsley
1/4 pound Cheddar cheese - shredded
1/4 pound hot pepper cheese - shredded
Green chilis may be added to mixture.
Drain artichoke hearts. Reserve liquid from 1 jar and saute onion and garlic in liquid.
Put chopped artichoke hearts in bowl.
Beat eggs and add bread crumbs, salt, oregano,
Tabasco sauce, pepper and parsley.
Add onion-artichoke mixture to egg mixture.
Add cheeses to mixture, along with chilis, if being used.
Bake at 325 degrees for 30 minutes in a 9-inch square greased pan.
Let cool for 2 hours.
Cut into squares. Serve warm or cold.
