2 (6 oz.) jars marinated
1 small onion, finely chopped
1 clove garlic, minced
1/4 c. fine bread crumbs
1/4 tsp. salt
1/8 tsp. pepper
1/8 tsp. oregano
1/8 tsp. liquid hot pepper
1/2 lb. sharp Cheddar cheese
2 Tbsp. minced parsley
Drain marinade from one jar to the artichokes into a frying pan.
Drain the other jar.
Chop artichokes and set aside.
Add onion and garlic to frying pan and saute until onion is limp (about 15 minutes).
In a bowl beat eggs; add bread crumbs, salt, pepper, oregano and hot pepper seasoning.
Stir in cheese, parsley and artichokes and onion mixture.
Turn into greased 9 x 13-inch baking dish.
Bake at 325 degrees oven for about 30 minutes.
Let cool in pan, then cut into 1 inch
Serve cold or reheat in pan in 325 degrees oven 10 to 12 minutes.
