2 (6 oz.) marinated artichoke
1 small onion, chopped fine
1 clove garlic, minced
1/4 tsp. salt
1/8 tsp. oregano
1/2 lb. shredded sharp Cheddar
1/4 c. dry bread crumbs
1/8 tsp. pepper
1/8 tsp. Tabasco sauce
2 Tbsp. minced parsley
Drain marinated artichoke hearts from 1 jar into a frypan.
Drain another jar.
Chop all artichokes, then set aside.
Add onion and garlic to pan and saute until limp.
In a bowl, beat eggs with fork or wire whip. Add crumbs, salt,pepper, oregano and Tabasco sauce. Stir in cheese, parsley,artichoke and onion mixture.
Turn into greased 7 x 11-inch baking dish.
Bake in 325 degrees oven about 30 minutes or until set.
Let cool in pan and cut into 1-inch squares. Serve warm or cold.
Makes about 6 dozen medium squares.
