INGREDIENTS

  • Cooking Time: 50
  • Servings: 8-10
  • 2 large acorn squash
  • 2/3 cup orange juice
  • 1 cup firmly packed light brown sugar
  • 1/2 cup light corn syrup
  • 1/2 cup melted butter
  • 1 tablespoon grated lemon peel
  • 1/4 teaspoon salt

DIRECTIONS

  1. Preheat oven 350
  2. Trim ends from squash; cut into crosswise slices 1/4 inch thick
  3. Place slices in a large lightly buttered shallow baking pan; add orange juice
  4. Cover with foil and bake for 30 minutes
  5. Combine brown sugar, corn syrup, melted butter, lemon peel, and salt; pour over squash rings.
  6. Bake, uncovered for about 15-20 minutes longer, basting occasionally until acorn squash is done and nicely glazed
