Why I Love This Recipe
Ingredients You'll Need
8 Oreo cookies, split (see note)
1 pkg. (8 oz.) cream cheese, softened
1/4 cup sugar
1/2 teaspoon vanilla
1/4 cup chocolate chips
1 tablespoon shortening
Preheat oven to 350ºF. Line a muffin pan with paper-and-foil baking muffin liners . Place one cookie half, filling side up, in each liner.
With an electric mixer, beat cream cheese, sugar and vanilla until smooth and fluffy. Beat in egg until well mixed. Spoon mixture into baking cups on top of cookies. Crush remaining cookie halves and sprinkle on top. Bake for 20 to 30 minutes or until a knife inserted into cheesecake comes out clean. Let cool.
Meanwhile, melt chocolate chips and shortening over low heat in a double boiler or in the microwave, stirring frequently. Drizzle chocolate over cooled cheesecakes. Cover and chill.
Note: Split cookies so filling is on one side of the cookie only.
