Almond Cherry Cheesecake

Ingredients

Crust (9-inch):
2/3 cup graham cracker crumbs
1/4 cup butter or margarine, melted
1/2 cup slivered almonds, broken
1/4 cup sugar
Filling:
1 pkg. (8 oz.) cream cheese, softened
1/4 cup sugar
2 eggs
1 cup cherries
Topping:
1 pint sour cream
5 tablespoons sugar
1/2 teaspoon almond extract
slivered almonds for garnish (optional)
maraschino cherries for garnish (optional)


Mix crust ingredients and press onto bottom and sides of pie pan. Beat cream cheese and sugar until fluffy. Mix in eggs until creamy and smooth. Stir in cherries. Pour cream cheese mixture into crust. Bake at 375ºF for 20 minutes. Let pie cool for 10 minutes.


Mix topping ingredients, except for almonds. Pour over pie. Bake pie at 375ºF for 5 minutes. Top or garnish with slivered almonds, if using. Cool pie 8 hours or overnight before serving. Garnish with cherries, if desired.
