Almond Joy Cookies
1/2 cup soft butter
2 cups pwdered sugar
3 cups coconut
1 tsp vanilla
Butter your hands and mix ingredients together. Form 1/4 inch to 1/2 inch balls and form a well in the center of the ball with your thumb. Place on wax paper.
Melt 3 to 5 squares of unsweetened chocolate and fill the wells of the cookies. Try not to use to much but just enough (about 1/4 tsp)to make the almond stay put.
Place an almond in the chocolate and let dry. Be sure to store in air tight container. These also freeze really well.
