Basmati Rice (or any rice you prefer)
1 tsp veg oil
2 cloves garlic
Small red pepper, diced
1/4 cup green onion, diced
Dried or fresh parsley
Cook 1-2 cups of rice (depending on number of people) according to directions, adding chicken broth instead of water. If there is time, allow the rice to cool for an hour or two.
Place a skillet on med heat and add cooking oil, such as vegetable oil. Saute minced garlic and sliced almonds for a couple of minutes. Add diced red pepper and green onion, cook for a couple minutes. Add the rice and parsley. Cook until rice is heated and serve.
