ALOO SAG - POTATOES AND SPINACH

Aloo Sag - Potatoes and Spinach

This is an Indian food dish one of my best friends makes and it's rather tasty.

  • 5 tablespoons olive oil
  • 1 tablespoon butter
  • 1 red onion diced
  • 1 1 inch piece ginger grated
  • 2 cayenne or chili peppers finely diced
  • 1 teaspoon tumeric
  • 2 cloves of garlic minced
  • 1 pound red potatoes peeled and diced into 1 inch cubes
  • 1 pound of frozen or fresh spinach
  • salt to taste

DIRECTIONS

Use a large pan that has a lid so you can steam the potatoes.


Heat the pan and add the oil, butter and onion.


Saute the onion for 2 minutes.


Add ginger, chilies, garlic and turmeric. Cook until onion is transparent.


Add potatoes, toss with other ingredients and salt to taste.


Cover and cook until potatoes are tender, about 15 minutes.


Once potatoes are tender add spinach.


If frozen the spinach must be thawed and dewatered, if fresh just add it.


Cook until spinach is wilted.

This is SOOOOO delicious and healthy - and easy!! Using fresh spinach makes it even easier. We are trying to eat healthier and this is perfect as a main dish. Thanks so much for this recipe! Molly and Ed
